Upgraded from the Ascaso Steel Uno Professional, this unit features PID - the newest innovation from Ascaso that allows the user to change the temperature of the coffee boiler to achieve a superior and more consistent espresso extraction.

The three-way solenoid valve operates to relieve the pressure on the filter basket immediately when you finish your shot. This prevents the gross expulsion of wet coffee grounds that is found on home espresso machines without three way solenoid valves. This valve also assists in creating a drier puck after the extraction.

What's a PID you ask? A PID is a Proportional, Integral and Derivative controller. they are industrial controllers which are capable of maintaining a temperature with some aplomb. They're complicated electronic devices but they're relatively inexpensive and quite easy to use. The user sets the target temperature on a little screen and the PID controller learns the behavior of the system (in this case your espresso boiler) and flips the heating element on and off rapidly to maintain that temperature.  It keeps the temperature within a few degrees of the targeted setting.
